Olive Oil ¼ c. fresh lemon juice 2 T. lemon zest 1 T. minced garlic (3 cloves) Opt. 2 T. fresh dill Whisk these ingredients together and it is just that easy. Store in the refrigerator in a sealed container for up to two weeks. Jennifer at Home Italian Lemon Chicken Marinade: 2 boneless chicken breasts Juice and zest of 2 lemons 3 cloves of garlic, minced 3 T. Olive Oil, divided 1 t. dried oregano Salt & pepper to taste Sauce: ½ c. chicken broth 2 T. butter Parsley to garnish, optional Assemble marinade and add chicken to it. Chill at least 15 min to 1 hour. Heat olive oil in a pan and cook chicken. About 5 minutes on each side, until it is 165 degrees. Remove chicken from the pan and add in the broth, and oregano. Pour in the marinade from the bag and simmer. Bring to a simmer and let it reduce at least 4 minutes. Once it reduces, add butter and stir until melted and sauce is glossy.
