Soft, chewy, cinnamon cookies with a hint of pumpkin flavor. They are so easy to make and they freeze really well too. Make them ahead of time and have them handy. My YouTube Handle: youtube.com/@JenniferatHome My YouTube Page: https://www.youtube.com/c/JenniferatHome Instagram: @Jennifer_at__home @JenniferatHome Jennifer at Home Pumpkin Snicker Doodle Cookie Recipe: ½ c. butter, softened ½ c. pure pumpkin (not pie filling) 1egg 1 ½ c. sugar 3 c. flour 1 t. cream of tarter 2 t. baking soda ¼ t. salt 1 T. pumpkin pie spice • Pumpkin pie spice recipe: • 3 T. cinnamon • 1 t. ground nutmeg • 2 t. ground ginger • 1 t. allspice • 1 t. ground cloves • Mix these together and store in a sealed container. Cookies: Mix the first 4 ingredients, just until incorporated. Add in dry ingredients, flour gradually while mixing. Roll dough into balls. Roll balls in a mixture of Cinnamon and Sugar. (2 T. sugar & 2 t. cinnamon). Place on a lined baking tray and bake on 350 for 10-12 minutes.
