We had the rare opportunity to meet Chef Justin, right? He's in from Pittsburgh.

It was amazing to chat with him about how he's trying to bring this approachable, authentic experience of Spanish cuisine.

But I do think for I don't want to call it the average sailor, but for someone who doesn't geek out on all of the, you know, story and details of Rojo, if you just see the dish with just the chip, I I don't think everyone would easily understand it.
