Add the dough hook to the mixer and turn on slow speed. Gradually add flour until the dough is not sticky and has taken on enough flour to absorb any moisture 5. Kneed the dough using the mixer or by hand for 9-10 minutes until it becomes elastic and non-sticky 6. Place in a lubricated bowl and tightly cover with plastic wrap. Set in a warm place for about 90 minutes or until the dough has doubled in size Preheat oven to 4000 and place a oven safe container of water in the oven 7. Knock down the dough and divide into two equal by weight pieces. 8. Working one at a time on a piece of parchment paper, lightly flour the dough and roll out to a 10’ x 14” rectangle 9. Cover the dough first with the cheese mixture leaving about 1” on all sides. The spread the Salami over the cheese in 3 rows of 4 10. Use the parchment paper to assist in rolling the dough into a loaf shape. Gently seal the ends and seam. Repeat with other piece of dough. Using an egg mixed with a little water brush both loaves to help in browning 11. Making sure loaves are separated with parchment paper cover with a damp cloth and let rise in a warm place for 30-45 minutes 12.
