Whisk in milk and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Remove the mixture from heat and let it cool completely. In a large mixing bowl, beat heavy cream and vanilla extract until stiff peaks form. Add mascarpone cheese to the cooled egg yolk mixture and beat until smooth. Fold the whipped cream into the mascarpone mixture until well combined. In a small bowl, mix together the coffee and rum.
