I kind of do both I do the gratuities so that every member of the crew gets a little something

I look for the the waiter or waitress or the bar staff that are really going above and beyond

I slip them a $10 bill on that first night or that second night and ensures that I get amazing um service the rest of the trip

at the end of the trip I'll give them another 20 if they kept up that that extra service
