Why is there not much to do in Amber Cove? The Carnival Mardi Gras visited the port for the first time on its inaugural sailing, which was my fourth solo cruise. I take you on a quick walking tour of Amber Cove, just steps from the new Carnival Mardi Gras. Amber Cove, on the north side of the Dominican Republic, is a port operated by Carnival Corporation. However, unlike many private port experiences, I found that unless you are on an excursion, there is not much to do here. This would be a good port to stay on the ship and have an extra sea day. I began my day with breakfast at Shaq's Big Chicken after Emeril's Bistro did not have all their breakfast items. I then exit the ship to explore Amber Cove, including the big pool and all the shops. Once back onboard Mardi Gras, I eat at Street Eats, relax in my balcony cabin, and have dinner at Guy Fieri's Pig & Anchor Smokehouse before a stunning sunset. The Carnival Mardi Gras was the first ship to sail from Port Canaveral in over 15 months. The Mardi Gras is the brand new ship from Carnival Cruise Line, the first of its Excel Class of ships.
