you can start when you want to as well, right? That's the other benefit of not having the multiple covers on one table is that you don't have a set time that you have to go each night.

in essence, from a hospitality perspective, it's quite impressive that you could have essentially theoretically the entire restaurant could turn up all at once and they would just have to deal with that.
