We stayed 3 nights at the El Conquistador Resort in Fajardo, Puerto Rico before our Virgin Voyages cruise out of San Juan. It is a beautiful property that boasts 15 restaurants and bars and an 18 hole golf course. The resort is located on a 300 foot cliff overlooking the ocean to the east. Take the 'Funicular' down to ocean level to the marina for the ferry to Palomino Island. Enjoy lunch and drinks in the restaurant and then some down-time on the beach.
