In today's episode, we're visiting J. Graham's Cafe, in the Brown Hotel, to try one of Kentucky's most famous dishes, The Hot Brown. The Hot Brown is a hot, open-faced sandwich that was created in 1926 by Fred K. Schmidt at the Brown Hotel in Louisville, Kentucky. The sandwich is made with Texas toast, thick-sliced turkey, Mornay sauce, bacon, and tomatoes, and is baked until bubbling hot. The story goes that the Brown Hotel hosted lavish dinner dances in the 1920s, and guests would work up an appetite dancing and merrymaking. One night, head chef Fred Schmidt created a new dish with items he had on hand in the hotel kitchen, instead of the usual ham and eggs. Legend has it that the maitre d' pointed out that the thick slices of white bread, turkey, and Mornay sauce were all basically the same color, so the chef added two slices of bacon and pimentos on top for a splash of color.
