Duane's third stop on his chicken wing world tour is Mexico! Fiesta Wings Ingredients: 2 tblsp ranch dressing 1-1/2 tblsp hot sauce – Texas Pete, Tapatio, or other preferred sauce – to taste. 2 tsp pureed or mashed jalapeno or chili pepper – can be fresh or jarred. 1 tblsp grated parmesan cheese ½ tsp salt ½ tsp garlic powder ¼ tsp chili powder 2 tblsp taco seasoning (use your favorite mix) 8 to 10 whole uncooked chicken wings as preferred. Directions: Preheat oven to 400 F • Line a shallow sheet pan with foil and apply cooking spray to keep wings from sticking. • Place wings on sheet pan so they do not touch each other and place in the preheated oven. Let cook for about 35 minutes. • While chicken is cooking, mix all the ingredients in a small bowl and set aside. • Check the wings looking to see skin is browning nicely. More time will be needed. Check every 5 minutes until the skin is medium to dark brown. They are usually ready for coating within 45 minutes. • If a lot of fat has rendered, carefully drain the pan into a metal, heat proof container. (Never pour fat down your drain as it will solidify and cause numerous problems). • Using a basting brush, coat every wing on all visible surfaces and return them to the oven. Let cook for 5 minutes. • Repeat the coating process a second time, returning the wings to the oven for a final 5 minutes. • Remove wings from oven and let cool for a couple of minutes before eating.
